Storing a pack so it keeps its strength

  1. Close it properly. Press the seal along its whole length, not just the middle. Air is what dulls ground spice.
  2. Keep it out of the light. A closed cupboard, not the windowsill and not the shelf above the stove.
  3. Keep it dry. Never shake a pack over a steaming pot. Steam travels up into the pack and turns the contents to clumps.
  4. Use a dry spoon. If you decant, decant into something dry and clean.

When should you season - before cooking, or during?

Season before cooking when you want the flavour to sit on the surface and colour as it cooks, and season again near the end when you want the aroma to still be there when the food reaches the table. Most cooking wants both.

The reason it matters is that the two things a seasoning does happen at different times. The savoury, roasted side of a blend develops in the heat and needs time. The bright, aromatic side is the first thing to cook off, so anything added early has largely gone by the time you serve.

  1. Rub on before the heat. For meat, work the pack into the surface before it goes on. Coarse blends such as Braai & Chop are built for this and hold their texture.
  2. Leave it to sit if you have time. Even a short rest lets the salt in a blend draw moisture to the surface, which helps the rest of the seasoning stay put.
  3. Season again as it cooks. Over open flame, some seasoning is always lost to the coals. A second pass partway through replaces it.
  4. Add the aromatic packs late. Mixed Herbs and Citrus Pepper give up their aroma quickly. Added in the last few minutes, they still smell of themselves at the table.
  5. Add heat last, and taste. Cayenne sits at the top of the meter, so build it up a pinch at a time near the end rather than committing early.

For how much to use, the dosage guidance for each pack is set out in the table further up this page. It is stated per pack rather than as a single rule, because a coarse braai blend and a fine ground chilli do not behave the same way at the same weight.
